Spiced squid

Ingredients

        • 350g squid (I used a 360g pack of frozen tenderised squid)
        • Juice of half a lemon
        • 2 tbsp tamari or coconut aminos
        • 2 tbsp butter or coconut oil
        • 1/2 tbsp of honey (optional)
        • 1 small onion, finely diced
        • 2 cloves garlic, minced
        • 1/4 tsp nutmeg
        • 1/4 tsp coriander
        • 1/4 tsp turmeric
        • 1/4 tsp pepper
        • 1/4 tsp sea salt

Instructions

        1. Marinate the squid in the lemon juice for 15 minutes
        2. Meanwhile combine all other ingredients in a small saucepan and cook for about 2 minutes until it starts to bubble
        3. Remove from heat and allow to cool for 10 minutes
        4. Rinse the squid and drain well
        5. Marinate the squid in the sauce for at least half an hour (or over night)
        6. Grill or pan fry the squid on high heat for about 1 minute each side, pouring the remaining marinate over the squid while its cooking
        7. Enjoy served with cauliflower rice and vegetables or added to a stir fry. Any leftovers are nice the following day served cold with a salad. The above photo shows the squid served with sauteed kale and a carrot beet salad.
