Flavoured Coconut Milk and Berry Easy Chia Puddings

These 2 recipes, like so many others of mine, are super easy to make and healthy. These 2 recipes are also bound to please adults and children alike. First up is flavoured coconut milk. I have used berries to flavour this version but feel free to add flavours of your choice, such suggestions are vanilla essence, carob syrup or cacao powder. The second recipe uses the first recipe as a base but by adding chia seeds you end up with a healthy pudding suitable for breakfast, dessert or a snack.

Flavoured Coconut Milk (makes 2 cups, double the recipe for 1 litre)

Ingredients

  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup fresh or frozen berries (I used blueberries)
  • 1/2 tbsp honey (optional)
  • 1 cup boiled water
  • 1 cup cold water

Instructions

  1. If you have time soak the shredded coconut in the boiled water for 10 minutes (if your in a hurry go straight to step 2)
  2. Add the shredded coconut and hot water to a blender and blend on high for 10-20 seconds
  3. Add the berries, honey and cup of cold water to the blender and blend for a further 20 seconds. By now you’ll have a blender full of liquid and berry bitsP1080416
  4. Pour the coconut berry mixture from the blender into a nut milk bag (a piece of muslin cloth or stocking will work) over a bowl. I put the nut milk bag in a strainer so that it doesn’t fall into the strained liquid in the bowlP1080418
  5. Let the liquid strain into the bowl, squeezing the bag to get as much liquid out of the pulp as possible. Tip: don’t throw away the pulp, this can be used in muffins (freeze to use later on).
  6. The liquid in the bowl is now ready to drink, use to make Chia Puddings or put in the freeze for later P1080426

 

 

Berry Easy Chia Puddings (1-2 serves)

  • 1 cup of flavoured coconut milk
  • 2-3 tbsp of chia seeds (depending on desired thickness)
  • Berries and shredded coconut (optional)

Instructions

  1. Simply stir the coconut milk and chia seeds together in a bowl then pour into serving bowls (or a container for convenient carrying) and let them let sit in the fridge for a few hours or overnight
  2. Wait wait wait… this is the hard part haha
  3. When ready to eat them, top them with berries and shredded coconut (the ones in the photo have coconut cream and sunflower seeds also) and enjoy. Too easy
